Soymilk

Arrr. I have a whole bunch of soy milk and I don't know what to do with it... it'll going to expire and I want to cook/bake something with it.

What should I do? I was thinking cupcakes since I have tons of cupcake liners ready to be used.

Any recipes out there? What do you do with your soymilk, except drinking it, of course.
